You should restrict your use of former and latter to those situations where just two referents are involved. The former is the first one; the latter is the second one. If you have more than two, then use first instead of former and last instead of latter.

My two children enjoy apples and oranges. My son likes the former while my daughter prefers the latter.

Our flag is red, white, and blue. My son likes the first color, my daughter the last.
